Description

A simple, one-pan meal featuring Italian sausage, sweet potato gnocchi, and vegetables roasted together and finished with a balsamic glaze.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 (16 ounce) package shelf-stable sweet potato gnocchi
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons balsamic glaze


Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the sausage, uncooked gnocchi, red bell pepper, and red onion.
  3. Drizzle the mixture with olive oil. Sprinkle with Italian seasoning, salt, and pepper. Toss everything together until the sausage and vegetables are evenly coated.
  4. Spread the mixture in a single layer on the prepared baking sheet.
  5. Roast for 15 minutes.
  6. Remove the pan from the oven. Add the cherry tomatoes to the pan and gently toss the ingredients.
  7. Return the pan to the oven and roast for another 10 to 15 minutes, or until the sausage is cooked through and the gnocchi are lightly browned and slightly crisp.
  8. Remove from the oven. Drizzle the balsamic glaze over the entire sheet pan mixture before serving.

Notes

  • Do not overcrowd the pan; use a large sheet pan so the ingredients roast instead of steam.
  • For crispier gnocchi, ensure they are spread out and not touching too much.
  • Shelf-stable gnocchi works best for this method as fresh gnocchi can become too soft.
