  • 1 (32 oz) carton chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 (9 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach
  • 1/4 cup heavy cream (optional)
  • Parmesan cheese, for serving


Instructions

  1. Place chicken breasts in the bottom of a 6-quart or larger slow cooker.
  2. Add chicken broth, diced tomatoes, cream of chicken soup, onion, carrots, celery, Italian seasoning, garlic powder, salt, and pepper to the slow cooker.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shredded.
  4. Remove the chicken from the slow cooker and shred it using two forks.
  5. Return the shredded chicken to the slow cooker.
  6. Add the tortellini and fresh spinach to the slow cooker.
  7. Cover and cook on high for an additional 15-20 minutes, or until the tortellini is tender and the spinach has wilted.
  8. Stir in the heavy cream, if desired, for a creamier soup.
  9. Serve hot, garnished with Parmesan cheese.
