Description

Make campfire flavor without the fire! These S’mores Bars give you that gooey, chocolatey, marshmallow delight in an easy-to-bake square. Perfect for a quick summer treat when you want the classic taste without the hassle.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups graham cracker crumbs (about 10 full sheets)
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows


Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, whisk together the flour and salt. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the vanilla extract and egg until just combined.
  4. Gradually add the dry ingredients (flour mixture) to the wet ingredients, mixing on low speed until a soft dough forms.
  5. Press two-thirds (2/3) of the dough evenly into the bottom of the prepared baking pan to form the base layer.
  6. Sprinkle the graham cracker crumbs evenly over the base layer of dough.
  7. Distribute the chocolate chips over the graham cracker layer.
  8. Crumble the remaining one-third (1/3) of the dough over the chocolate chips.
  9. Bake for 20 minutes.
  10. Remove the pan from the oven. Carefully sprinkle the mini marshmallows over the top layer.
  11. Return the pan to the oven and bake for another 5 to 7 minutes, or until the marshmallows are puffed and lightly golden brown. Watch closely to prevent burning.
  12. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  13. Cut into squares and serve.

Notes

  • For a richer flavor in the base, use melted butter instead of softened butter in step 3.
  • You can use milk chocolate or dark chocolate chips based on your preference.
  • If you do not have mini marshmallows, you can chop up larger marshmallows, but they may brown faster.
  • Allowing the bars to cool fully makes cutting much cleaner.
