  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 14 oz canned artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese, plus more for topping
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the softened cream cheese, sour cream, mayonnaise, Parmesan cheese, parsley, and minced garlic. Mix until smooth and well combined.
  3. Stir in the thawed and squeezed dry spinach and the chopped artichoke hearts. Season with salt and pepper to your liking.
  4. Add the bite-sized chicken pieces to the spinach and artichoke mixture. Stir gently to ensure the chicken is evenly coated with the creamy sauce.
  5. Pour the mixture into the prepared baking dish and spread it out evenly.
