Ingredients
Scale
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sugar
- 1 cup fresh or frozen (thawed) sweet corn kernels
- 1/4 cup chopped green onion
- 1 large egg, lightly beaten
- 1/2 cup milk
- Vegetable oil, for frying
Instructions
- In a medium bowl, whisk together the flour, baking powder, salt, pepper, and sugar.
- Stir in the sweet corn kernels and green onion until just combined.
- In a separate small bowl, whisk the egg and milk together.
- Pour the wet ingredients into the dry ingredients. Mix gently until you have a thick batter. Do not overmix.
- Pour about 1 inch of vegetable oil into a deep skillet or pot. Heat the oil over medium-high heat until it reaches about 350 degrees F (175 degrees C).
- Carefully drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon. Work in batches to avoid crowding the pan.
- Fry for 2 to 3 minutes per side, until they are golden brown and cooked through.
- Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Serve warm immediately.
Notes
- For the best flavor, use fresh sweet corn if it is in season.
- You can adjust the sugar slightly depending on how sweet your corn is naturally.
- Test the oil temperature by dropping a tiny bit of batter in; it should sizzle immediately but not burn.
