- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 2 eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 sleeve Ritz crackers, crushed (about 1.5 cups)
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the sliced yellow squash and chopped onion.
- In a separate bowl, whisk together the melted butter, condensed soups, sour cream, milk, beaten eggs, salt, and pepper.
- Pour the soup mixture over the squash and onion mixture. Stir gently to combine.
- Pour the squash mixture into the prepared baking dish.
- In a small bowl, mix the crushed Ritz crackers with the shredded cheddar cheese.
- Sprinkle the cracker and cheese mixture evenly over the top of the casserole.
- Bake for 30-40 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let it stand for a few minutes before serving.
Notes
- For extra flavor, you can add a pinch of garlic powder to the cracker topping.
