  • 1 cup chopped onion
  • 1/2 cup butter, melted

  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 sleeve Ritz crackers, crushed (about 1.5 cups)
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13 inch baking dish.
  3. In a large bowl, combine the sliced yellow squash and chopped onion.
  4. In a separate bowl, whisk together the melted butter, condensed soups, sour cream, milk, beaten eggs, salt, and pepper.
  5. Pour the soup mixture over the squash and onion mixture. Stir gently to combine.
  6. Pour the squash mixture into the prepared baking dish.
  7. In a small bowl, mix the crushed Ritz crackers with the shredded cheddar cheese.
